Manakeesh are a very popular middle eastern breakfast food. Manakeesh is a flatbread topped with a variety of possible toppings. A few of those toppings are za’atar, and a blend of cheeses, and an onion and tomato paste called keshek. Most often, Manakeesh are made the size of a personal pan pizza and folded in half like a sandwich for easy consumption. In Lebanon, Manakeesh are known as the go-to breakfast. This particular dish is similar to Italian pizza, made middle-eastern style. You can use this recipe for any tortilla, pizza, or pita bread substitute, without the gluten or dairy! Ingredients
300g green buckwheat
2 1/4 cups water
Sea Salt
2 tbsp Almond flour
1 tbsp psyllium powder
Method
- Soak raw buckwheat in water overnight (12-14 hours). 1 cup of buckwheat would need 1.5 cups of water.
- Next day, dump soaked buckwheat with its water, add 2tbsp of almond flour and 1 tbsp psyllium powder into a blender, 1/4 tsp of sea salt into a food processor. Pulse until combined. You can also use a regular blender.
- Smear avocado oil on to a non-stick medium size oven pan, then take the blended mixture and pour it into the pan.
- Preheat oven 350 degrees F.
- Bake for 45 mins or until it turns golden brown. If you want more of a crispy texture, keep it in the oven for a little longer and monitor its texture.
- I personally added a middle eastern Zaatar mix, drizzled with olive oil over the crust and fresh pomegranates. Garnish with mint leaves.
You can use any topping you want for this gluten-free, high-protein, anti-candida crust! Healthy pizza IS possible.
Sahtein! (in the middle east this saying quite literally means 2 healths)
