Zaatar Mana'eesh, Middle-Eastern Flatbread Gluten Free, Dairy-Free

Manakeesh are a very popular middle eastern breakfast food. Manakeesh is a flatbread topped with a variety of possible toppings. A few of those toppings are za’atar, and a blend of cheeses, and an onion and tomato paste called keshek. Most often, Manakeesh are made the size of a personal pan pizza and folded in half like a sandwich for easy consumption. In Lebanon, Manakeesh are known as the go-to breakfast. This particular dish is similar to Italian pizza, made middle-eastern style. You can use this recipe for any tortilla, pizza, or pita bread substitute, without the gluten or dairy! You’ll want this Gluten-free buckwheat recipe in your life. Restaurants and markets simply cannot compete with healthy homemade middle-eastern pizza!

If you’re looking for flaky gluten-free pizza crust without pricey GF flour mix, xanthan gum and other unusual ingredients - this recipe is exactly what you need. It is easy to mix and delicious. 

Ingredients

300g green buckwheat
2 1/4 cups water
Sea Salt
2 tbsp Almond flour
1 tbsp psyllium powder

Method

  1. Soak raw buckwheat in water overnight (12-14 hours). 1 cup of buckwheat would need 1.5 cups of water.
  2. Next day, dump soaked buckwheat with its water, add 2tbsp of almond flour and 1 tbsp psyllium powder into a blender, 1/4 tsp of sea salt into a food processor. Pulse until combined. You can also use a regular blender.
  3. Smear avocado oil on to a non-stick medium size oven pan, then take the blended mixture and pour it into the pan.
  4. Preheat oven 350 degrees F.
  5. Bake for 45 mins or until it turns golden brown. If you want more of a crispy texture, keep it in the oven for a little longer and monitor its texture.
  6. I personally added a middle eastern Zaatar mix, drizzled with olive oil over the crust and fresh pomegranates. Garnish with mint leaves.

    You can use any topping you want for this gluten-free, high-protein, anti-candida crust! Healthy pizza IS possible.
